One or two flower heads, the artichokes, covered with hard bracts, grow from the stem, which is about two spans long. The flowers are purple-blue and tubular. The tender, edible part is found inside the flower heads, but the younger leaves are used in phytotherapy because they contain the bitter active ingredients that are beneficial for health.
