Histamine is not only a powerful messenger substance in the human body, but can also be ingested through food. The list of foods that contain histamine or promote its release in the body (= histamine liberators) is extensive. In addition to well-known classics such as red wine, aged cheeses, and smoked meats, it also includes numerous plant-based foods.

Under normal conditions, our body is able to break down dietary histamine in the gut with the help of the endogenous enzyme diamine oxidase (DAO). However, increased exposure to histamine — whether due to reduced enzyme activity or an imbalance between intake and the breakdown of dietary histamine — can cause discomfort after meals.
