What is Vitamin C?
Vitamin C is called ascorbic acid, which means: the acid that neutralizes scurvy. Vitamin C is a water-soluble vitamin and an antioxidant that is part of several intracellular antioxidant systems involved in neutralizing reactive oxygen compounds (also known as free radicals). Vitamin C also functions as a cofactor in various enzymatic processes. Vitamin C is distributed throughout the body's aqueous structures—that is, any structure not composed of fat or bone tissue.
White blood cells and blood platelets contain the highest concentration of vitamin C. The adrenal glands and pituitary gland, as well as the testes and ovaries, also have particularly high concentrations of vitamin C. The concentration of vitamin C in the brain is 10 times higher than that found in the blood.
Mammals synthesize vitamin C
Almost all mammals are capable of synthesizing vitamin C in their adrenal glands through an enzymatic conversion of glucose. In animals, vitamin C functions as a hormone. In humans, on the other hand, the gene for the enzyme responsible for vitamin C production contains a series of mutations that result in the inability to produce it, and therefore we depend on its dietary intake.
Properties of Vitamin C:
- It is an important antioxidant that is involved in intracellular antioxidant systems;
- It is absorbed almost entirely from the intestine. In very high doses or in cases of diarrhea, absorption is reduced;
- It is capable of regenerating vitamin E that has been damaged by encountering free radicals;
- It maintains the active form of the enzyme propylhydroxylase, which helps hydroxylate newly produced connective tissue (collagen). Scurvy, a disease resulting from vitamin C deficiency, is a consequence of insufficient collagen hydroxylation.
- It is important for energy-yielding metabolism, the immune and nervous systems, and also for psychological functions.
- Improves the absorption of iron present in food;
- It is able to reduce tiredness and fatigue.
