Probiotics are living microorganisms that naturally inhabit the gastrointestinal tract. They are divided into different genera based on characteristics such as morphology, glucose fermentation mode, growth at different temperatures, lactic acid production patterns, and acid and alkali tolerance.

• Lactobacillus
  They are so named for their ability to convert lactose and other sugars into lactic acid. This acidic environment helps inhibit harmful bacteria. Some species, such as L. acidophilus, L. gasseri, and L. rhamnosus, also produce hydrogen peroxide. They are found in the small intestine and vagina and are widely used in fermented foods such as yogurt, sauerkraut, and bread.
• Bifidobacterium
  Saccharolytic organisms that produce acetic acid and lactic acid without generating CO₂. They are present from birth (especially in breastfed babies) and play an essential role in the intestinal flora of adults. There are about 30 identified species, including B. bifidum, B. animalis, B. breve, B. longum, B. infantis, and B. lactis. They are more abundant than lactobacilli, and many species can synthesize B vitamins and vitamin K.
