The endogenous enzyme diamine oxidase (DAO) is responsible for the degradation of histamine in the body.
However, for many people, this degradation process can be difficult. There are several causes for reduced DAO activity, but they all lead to the same result: discomfort after consuming various foods, caused by insufficient histamine degradation.
There is not always a direct deficiency of the DAO enzyme — sometimes it is an imbalance between the intake and the ability to break down dietary histamine that causes the symptoms.

The enzyme diamine oxidase (DAO)
Diamine oxidase is produced by special cells in the intestinal mucosa and released into the small intestine. This copper-containing enzyme is responsible for breaking down histamine and other biogenic amines from food, preventing them from being further absorbed by the body. Important cofactors such as vitamin B6, vitamin C, zinc, and copper enhance the activity of DAO, while the amino acid L-glutamine also plays a crucial role: it strengthens and regenerates the intestinal mucosa.
