Beta-glucans are a family of large molecules composed of glucose chains. They can be found in many organisms: the cell walls of various bacteria and yeasts, cereal husks, and mushrooms traditionally used in China and Japan.
They are conferred various properties . For example, in the late 1980s, work by J. Czop discovered a specific receptor for beta-glucans present on the surface of certain immune system cells*.
All beta-glucans do not have the same activity: the most famous forms are beta-1,3-glucans and beta-1,3/1,6-glucans, found in maitake and yeasts (especially baker's yeast Saccharomyces cerevisiae ).
